Ingredients vegan tomato soup (1 person)

  • 100 grams of tomatoes⁣
  • 1/2 onion
  • 55 grams of lentil paste⁣
  • 60 grams of leek⁣
  • 150 ml coconut milk
  • 1/2 onion
  • 5 grams of olive oil⁣
  • 1/2 tablet of vegetable stock⁣
  • 1 clove of garlic, 1 piece of ginger⁣ and 1/2 tbsp maca powder

Preparation of vegan tomato soup

  1. Cut the tomatoes into pieces and cook in a pan for 12 minutes with the coconut milk and vegetable stock. ⁣
  2. In the meantime, cut the onion, leek, garlic and ginger into pieces. ⁣
  3. Prepare the lentil paste according to the package. ⁣
  4. First fry the onion, ginger and garlic in a pan with olive oil, then add the leek and fry until done.
  5. Mix the tomatoes with a hand blender into a soup and then add the other ingredients.
