Vegan tomato soup recipe

Ingredients vegan tomato soup (1 person)
- 100 grams of tomatoes
- 1/2 onion
- 55 grams of lentil paste
- 60 grams of leek
- 150 ml coconut milk
- 1/2 onion
- 5 grams of olive oil
- 1/2 tablet of vegetable stock
- 1 clove of garlic, 1 piece of ginger and 1/2 tbsp maca powder
Preparation of vegan tomato soup
- Cut the tomatoes into pieces and cook in a pan for 12 minutes with the coconut milk and vegetable stock.
- In the meantime, cut the onion, leek, garlic and ginger into pieces.
- Prepare the lentil paste according to the package.
- First fry the onion, ginger and garlic in a pan with olive oil, then add the leek and fry until done.
- Mix the tomatoes with a hand blender into a soup and then add the other ingredients.
