Nigel van der Horst - Chef with Guts - is an inspiring man with a fierce story. For some time now, Nigel has been an ambassador for Plent and we were happy to share his answers to our burning questions with you. Hereby :-)

Who has been your great inspiration to start cooking and share it online?

I mainly started cooking through fitness and training. I've always had that if I find something interesting, I will explore it. If something doesn't really interest me then I & nbsp; won't get into it too quickly. Because I was busy with sports nutrition and therefore ate chicken, broccoli, and rice every day, it came out after a while. Then I started to study macronutrients, “I fit fits your macros IIFYM. How can I get the right macros with tasty and varied food. Kevin Curry from @Fitmencook has also inspired me to enjoy tasty yet healthy meals to create.

We saw in your Instagram stories that you meditate in the morning, can you tell us a bit more about your morning routine?

I've been on Instagram for some years now and I was always immediately busy with my phone in the morning. I noticed that in this way I didn't actually start my day with myself but with all the stimuli from the rest of the world. For example, I haven't watched the news for years, this gives me so much peace of mind. I do my morning meditation movie, but my phone is actually on airplane mode for up to 10 am while I get up at 6:30 am.

It is important for me to be concerned with who I really am. When I start the day for myself and myself, I start it much better. For me, the day always starts with a moment for myself and it really hurts me to start the day like this. No outside influences, just me with myself. I know from my old life that the world I was in was always busy. I think it's an art to really be with yourself and if you can, it gives so much more peace.

What is your opinion on the relationship between meditation and health? For example, how has meditation contributed to your health?

My opinion is that everything you do is interconnected and can therefore also contribute to your health. You will never hear me say that you should meditate, that you should eat or do certain things, that's just not in me.

Everyone should do what they want, but I would like to inspire people who are genuinely interested in what I do. As far as I am concerned, meditation certainly contributes to your health and much more. I have done a lot with breathing in Bali, which also ensures that you are more aware of it.

You have not always been vegan, why did you make this choice to now vegan be?

In terms of food, I am 95% vegan. I find it very difficult to say that I am 100% vegan, so I am not really vegan but I always call it some kind of religion. It is true that I take into account as many things as possible. I was not really involved with it before, it is something of the past years, it comes your way.

We see the world destroyed before our eyes, so if I can contribute to a better world through, among so.

What is your opinion on the relationship between meditation and health? For example, how has meditation contributed to your health?

What is your favorite breakfast?

There have been times when I eat pancakes every day, but how you get out of bed is not the same every day so I adjust my breakfast accordingly. If I really have to choose, pancakes are my favorite.

You indicated that you have been in Bali for a long time, can you tell me more about this trip? Why did you make this and what was your purpose for this?

Many of my friends went there. I heard many stories and then it really appealed to me. In 2018 I went to Baligeweest for the first time in 2 months. I loved the tranquility that the people there have, the energy, culture, traditions, respect, and much more. Actually, I never really had big plans when I went on a trip. I am someone who lives by the day so I always see it. I made my journey alone, I will see who or what comes on my path and I also went there to relax with myself.

During your stay in Bali, you had an accident and are still recovering from it. On your Instagram you call this one of your "biggest gifts", can you explain this?

During my stay in Bali, I fell from the balcony 6/7 meters high, breaking my back and both heels and then passed out in the pool. I was rescued just in time by a friend. I've always believed that certain things happen for a reason. There is much more than just our consciousness. How is it possible that you sometimes think about someone and that deeply then calls exactly at that moment. There are many people who have experienced violent events, who have looked death in their eyes and who have subsequently started to look at life and themselves in a different way.

OpBali has a friend of mine – Yanai aka Blu, someone who has really experienced the craziest and most bizarre things in life, who has lived in Bali for 17 years now and dedicates his time and actually his life to helping other people after my accident he has constantly been there for me.

He also helps people with problems such as severe trauma, gambling, sex or drug addictions. He has given me insight that this has happened for a reason and that something is ready for me.

He said, Nigel, “the god's have other plans for you my friend, but you have to wake up first my brother man! And, I am here to guide you ”We had been following each other on Instagram for a while and sometimes sent messages. After the accident, I spoke to him and told him what had happened. Within 10 minutes he was on the doorstep and never left.

During your stay in Bali you had an accident and are still recovering from it. On your Instagram you call this one of your "biggest gifts", can you explain this?

What do you get satisfaction from?

I'm in a weird situation right now, of course. I was in Bali and that was great in terms of quality of life and tranquility. I was very satisfied with little and I still am. I get a lot of satisfaction from small things. My first goal now is to fully recover from my accident.

My energy should be careful. I used to spend a lot of time on sports and that is now of course less. I am now more realistic and know that some things just aren't going to work right now and that's okay. I am content with where I am now and how things are going and I try to give a positive twist to every situation. I have had this from an early age, it is just in me.

Why would you look negative at something that you can also put a positive spin on, costs you less energy if you know how to make something positive than negative. You only make it harder for yourself if you are negative.

In 2017 you wrote a cookbook, this was before you became a vegan. Would you like to write a book in the future that is vegan and maybe tells more about your current lifestyle?

Certainly, some plans and ideas have been written out, it is not the right timing for now, but if I am back up and running and have enough energy to do that, then certainly. When I have fully recovered and am really ready, I will certainly get started and see what the possibilities are.
