What is Collagen?

Collagen is a long, fibrous protein that makes up the matrix of connective tissue. (Connective tissue consists of relatively few cells in a generous matrix, which is the ground substance and fibers between cells). The mesh of fibers formed by adjoining collagen molecules in tissues contributes to its structural and strength-giving properties2.
