Proteins (protein) are large, complex molecules that play many critical roles in the body. They do most of the work in cells and are needed for the structure, function and regulation of the tissues and organs of the body.

Proteins are composed of hundreds or thousands of smaller units called amino acids, which are attached together in long chains. There are 20 different types of amino acids that can be combined to make a protein. The sequence of amino acids determines the unique three-dimensional structure of each protein and its specific function.

Proteins account for about 42% of the dry weight of our body. The protein collagen - which keeps our skin, tendons, muscles and bones together - makes up about a quarter of the body's total protein. All our cells and even blood are packed with protein molecules.
